Southern University student-operated restaurant opens with tailgate-based menu

BATON ROUGE - Southern University’s Cafe LaCumba opens Wednesday morning for the first time this semester.

The student-ran restaurant is operated by the Dietetic Internship Program.

“Southern University is one of only five HBCU’s with a Dietetic internship program. It prepares them to become a registered Dietitian,” Alexis Motley, program director, says.

During each semester the restaurant opens once a month, with a different theme every time. The theme for Wednesday is “LaCumba’s Tailgate,” with the menu reflecting food you would find at a tailgate.
