Made in Louisiana: Cutrer's Sausage
KENTWOOD- It's no secret the people of Louisiana have a taste for the best cuisine, and one family has made that taste their speciality.
Cutrer's Meat Market in Kentwood has been slicing fresh cuts of beef and pork for decades, but they're best known for their hickory smoked pork sausage made from a 100-year-old recipe.
"We use nothing but lean pork shoulder meat, and it's trimmed out," said Raymond Cutrer, who runs sales for the family owned company, "So there's no filler meat in this sausage, there's no soy beans in this sausage or anything like that, it's just meat, seasoning, natural casing, real hickory smoke, and it's truly a unique experience as far as sausage goes."
There's one thing the Cutrers won't tell you, though: the secret ingredient that makes the sausage one of a kind.
"They say, 'We've got your seasoning now, so we can make sausage like you,'" said "Paw" Gaylon Cutrer, who perfected the sausage from his grandfather's century-old recipe, "But they don't have my seasoning!"
The Cutrers sell the sausage alongside dozens of cuts of steak and pork at their meat market in Kentwood, but also visit the Red Stick Farmer's Market each Thursday and Saturday, where you can try the sausage first-hand.
