La. strawberries sweeten up salad
BATON ROUGE - A local restaurant owner is using fresh Louisiana strawberries to help sweeten up normal salads.
Jim Urdiales, owner of Mestizo's Restaurant, is giving people a healthier alternative with his strawberry quinoa salad. Other than strawberries and quinoa, the recipe contains black beans, grilled chicken and a raspberry vinaigrette.
Full recipe and instructions for Louisiana Strawberry Quinoa Salad:
4 oz. of cooked quinoa
4 oz. chopped raw squash & zucchini
1 oz. of black beans
1 cup of mixed salad greens
1 oz. of raspberry vinaigrette
2 fresh LA Strawberries sliced
2 oz. of olive oil
1 8 oz grilled chicken breast
1 oz. of chopped tomatoes
1 oz. of chopped green onions
1 sliced avocado
1 oz. of cotija cheese
Heat pan with olive oil and then add raw veggies, black beans and quinoa. Saute for a minute. Deglaze pan with a squirt of white wine if you desire. Plate and add remaining ingredients for presentation
