Chef Jay Ducote with biteandbooze.com recommends pickling the crawfish tails with jalapenos and shallots. Once pickled, the crawfish can be placed on top of the creole deviled egg.

Ingredients for creole deviled eggs:

- egg yolk
- mayonnaise
- creole mustard
- white truffle oil
