Chef KD's Cajun Ratatouille Pizza
BATON ROUGE - Chef KD had a special guest in the studio today helping him prepare a Tasty Tuesday recipe.
KD and his assitant Gabe prepared a cajun ratatouille pizza, which he said is a great vegetarian summertime meal.

Cajun Ratatouille Pizza
ALL INGREDIENTS ARE DICED INTO ABOUT 1/2 INCH CUBES, YOU ONLY HAVE TO PEEL THE EGGPLANT
Note: This cooking method goes VERY FAST so you need to prepare your vegetables before you start step 1 below:
· 1 Cup Diced Seasoning
· ½ Cup Olive Oil
Simmer on High until seasoning starts to wilt and turn Brown. About 4 minutes
Add rest of ingredients
· 2 Yellow Squash
· 2 Zucchini
· 1 large Eggplant Peeled (or 2 small or 4 Japanese Eggplants)
· 8 ounces Mushrooms sliced thin use Regular or Portabella
Simmer on High stirring constantly adding water if it starts to stick. Add the seasonings you desire (Salt, Seasoning Salt, etc.) towards the end of cooking when Veggies are tender .
Add pizza sauce to veggies and simmer for 1 minute.
Season to taste.
Put on pizza crust and top with Grated Mozzarellas Cheese.
Bake 350 degrees for 7 to 11 minutes. Every oven is different and the temp of ratatouille sauce can vary depending on how long since cooked. If refrigerated I recommend that you heat in microwave until it is about 140F to make it easier.
