Charbroiled Chicken Breast

Ingredients:

10 oz boneless chicken breast
Salt
Pepper
Favorite Oil and Herb marinade (Italian dressing)
5 oz spinach (stems picked)
½ teaspoon Creole seasoning
1 oz olive oil

Procedure:

1. Lightly sprinkle salt and pepper on chicken breast, cover with marinade and place in refrigerator for 24 hours.
2. Cook chicken breast on open grill or sauce pan to desired temperature (6 to 10 minutes depending on heat)
3. Add olive oil to a warm saute' pan and add fresh spinach and Creole seasoning.
4. Sauté for 45 to 60 seconds.

Serve spinach on plate and chicken breast on top.
