The Bite and Booze writer said his cabbage, black-eyed peas and tasso soup is a tasty way to celebrate.

Cabbage, Black-eyed Peas, and Tasso Soup

8 Servings

Get your cabbage, black-eye peas, and pork all in one soup this New Year.


1 head cabbage, cubed
3 cans black-eyed peas (15.5 oz)
1 pound pork tasso, cubed
1 medium yellow onion, diced
5 stalks celery, diced
1 green bell pepper, diced
8 cloves garlic, minced
1 jalapeno, seeded and diced
1 can crushed tomatoes
3 cups chicken stock
salt and black pepper to taste
Slap Ya Mama Cajun Pepper Sauce to taste


In a cast iron Dutch oven, sauté the tasso over medium-high heat. Add the onion, celery, bell pepper, garlic, and jalapeno. Sauté for until the onion is translucent, about five minutes. Add tomatoes and chicken stock and bring everything to a rolling boil then reduce to simmer. Blend in cabbage and black-eyed peas. Continue cooking on simmer for thirty minutes. Season to taste with salt, pepper, and hot sauce.
