Chef Jim's Louisiana-style tacos
BATON ROUGE - Chef Jim Urdiales from Mestizo's showed us how to make the batter for his signature tacos.
He cooked Del Mar Tacos from the menu. It's a dish that includes a grilled shrimp, fried crawfish, and grilled fish taco.
Sweet potato batter for the fried crawfish:
8 oz. of sweet potato pancake mix
8 oz. of all puropose flour
1 oz of creole seasoning
1 egg mixed in milk for wet mix
8 peeled crawfish tails
